The best żurek recipe - for when you prefer to stay at home

Easter żurek recipe

according to the Head Chef of Albero Restaurant at Hotel Linea Mare in Pobierowo

  • rye flour sourdough, garlic, bay leaf, water
  • smoked pork bones
  • smoked bacon
  • porcini mushrooms
  • sour cream
  • white onion
  • garlic
  • vegetables (carrots, parsley, celery)
  • horseradish
  • allspice, bay leaf, salt, pepper, marjoram

In a pot, sauté diced onions with bacon and garlic. Then add vegetables, smoked bones, and spices (except marjoram) and simmer for about 1 hour. After this time, remove the vegetables and smoked bones. Once cooled, remove the meat from the bones and add it back to the broth.

To the soup, add horseradish, diced and sautéed porcini mushrooms, and sourdough. Cook everything for 30 minutes. At the end of cooking, pour in the sour cream, add marjoram, and season to taste.

Serve żurek with boiled white sausage and cooked egg.
